Our ancestors discovered smoking and curing as a way to preserve meat and also to make it portable -- with much of the liquid removed, meats could be taken to the farmer's field or even on a trip to a neighboring town. This vastly improved the opportunity to enjoy meats and, as a bonus, made food taste even better by intensifying the flavor.

We respect these traditions and refuse to compromise on meats or methods, with one delicious exception. Our "uncured" labeled meats are naturally preserved with a proprietary blend of celery juice and spices, curing them without the "cure" for those who prefer nitrate-free preparations.

The Niman Ranch Story

Niman Ranch started in the early 1970s, when Bill Niman began raising pigs, chickens, goats, and cattle on eleven acres in a small coastal town, just north of San Francisco. He raised his animals using traditional, humane husbandry methods and wholesome natural feeds. Before long, Bill began selling his beef to local grocery stores while restaurants were asking to put the flavorful beef on their menus.

Today, Bill still raises cattle on his California ranch and Paul cares for his hogs in Iowa, but the Niman Ranch family has grown to include over 500 independent American family farmers. Whether they raise hogs, beef cattle, or sheep, they all share a dedication to producing great flavor using only natural methods.
